The best way to make PUFF PASTERY

1 cup (250 g) water
½ tablespoon salt
1 tablespoon vinegar
1/3(70 g) cup melted butter
3 ¼(450 g) cups all-purpose flour
1 ¼(225 g) cups cold butter for folding

1. Combine water, salt, melted butter and flour in the bowl of a Standing mixer with a dough hook, and mix on low speed for 4 Minutes.
2. Remove the dough from the mixer and form it into a ball.
Wrap in plastic wrap and chill in the refrigerator for 1 hour.
The get a good puff pastry it is very impartment to work in order step after step.

Step 1 – make the dough and let it rest in the fridge for minimum of 30 min.


Step 2 – take the butter put it on a baking pepper close it well and with the rolling pin hit on it to make it slightly soft.


Step 3 – take the dough and a flat disc that will be 3 times bigger than butter.


Step 4 – put the butter on the center of dough and fold the sides of the dough that they will close the butter inside.


Step 5- roll the dough with the rolling pin to a long stripe and fold it by 1/3 on one side and then fold it by another 1/3 on the other side.


Step 6 -Put the dough in the fridge for minimum of 20 min and then repeat the process of step 5 and then put the dough in the fridge for another 20 min. the folding process needs to be repeated for 5 times to get a good puff dough.

Step 7- the ready dough needs to look like that.
